Hummus is a healthy and delicious dip that you can enjoy with pita bread, veggies, or tortilla chips. Traditionally, hummus is made using chickpeas which are cooked for a long time before being blended together with tahini (sesame paste), olive oil, salt, garlic, and lemon juice to make the perfect mixture for dipping!
However, if you want something even more exciting than classic hummus then why not give sun-dried tomato hummus a go? The tomatoes create another layer of flavor that will bring you to hummus heaven 😉
Sun-dried tomatoes are a big love of mine, I can eat them straight from the jar. Before making this recipe I was adding them to the top of my hummus and a couple of months ago I thought to blend them together. Later on, I found out that a similar recipe exists and I didn’t just discover it haha.
How to Enjoy the Sun-Dried Tomato Hummus?
There are so many possibilities when you have a good Sun-Dried Tomato Hummus in your hands. These are my favorite:
- Freshly chopped veggies
- Tortilla chips and crackers
- Pitta bread
- Baked potato wedges
- As a spread in sandwiches
- As a pasta sauce (top it with fresh basil to enhance the magic!)
Tips for an Epic Hummus
- Blend all the ingredients except the chickpeas to get a good starting paste. This will make the hummus much smoother.
- Add the Sun-Dried Tomato oil instead of the normal olive oil.
- Add a couple of mustard seeds to the paste to get an even more full taste.
- Add a little bit of filtered water to your hummus. Don’t use the water of the can of chickpeas. This way you can enjoy your hummus longer.
How Long Can You Enjoy This Hummus?
Whenever I make this hummus it disappears in the first 2 days, but it can stay for up to a week in the fridge, stored in a plastic or glass container.
If you wish to freeze it, feel free to do that. The sun-dried tomato hummus can stay in the freezer for up to 3 months.
