This Vegan Savory French Toast is a perfect breakfast on the days when you are craving something savory, served with a tasty avocado-beetroot sauce. It’s crispy, easy to make in just 20 min, and absolutely delicious!

I love savory vegan breakfast, and they are not the most common options usually. When I get tired of eating hummus toast or avocado toast, my favorite way to switch it up is by making this Savory French Toast. In the Balkans, this is a very common breakfast and I have beautiful memories of my dad making this in my childhood. The original recipe it’s just eggs, salt, and pepper. It’s served with sour cream or white cheese and it’s always savory. We call it “Przeni Lepcinja” which translates to fried toast.

How to make Vegan Savory French Toast?

In this recipe, we are making an eggless version with vegan ingredients. The egg is swapped with chickpea flour that gives a delicious crispy texture and beautiful golden color. To give it a similar taste to an egg we are using black salt, also known as Kala namak which has a high concentration of sulfur and a very similar taste to eggs.

One of the most important ingredients is having good bread. I would always recommend sourdough because it absorbs the batter very fast. And to get a perfect toast that will not fall apart cut thicker slices. The bread needs to just touch the batter to get enough coating. This recipe can easily be GF if you are using gluten-free bread. Choose a gluten-free bread that is not too dense and more fluffy.

I have a couple of favorite ways of serving this toast. 

  • Avocado-beetroot sauce that you can check in the recipe below.
  • In a traditional way with some vegan feta.
  • With vegan cream cheese and tomatoes.
  • In combination with tofu scramble.

Ingredients
  

For The Toast

  • 4-6 slices of bread 1/2 loaf of bread
  • 1 cup chickpea flour
  • 1 cup almond/soy milk + 3 tbsp if you want a lighter batter
  • 1 tbsp olive oil
  • 1/2 tbs salt
  • 1/2 tbs pepper
  • black salt - kala namak optional
  • 1 tbs turmeric
  • 1 tbs paprika
  • handfull of cherry tomatoes
  • parsley

For The Sauce

  • 1 avocado
  • 1 tbs beetroot powder
  • salt & pepper

Instructions
 

Savory French Toast

  • In a bowl add the chickpea flour, olive oil, salt, pepper, black salt, turmeric, and pepper. Mix it together and slowly start adding the milk. Mix until it's smooth.
  • Cut thick slices from the bread and coat them in the batter by touching each of the sides in the batter.
  • In a pan add around 2-3 tbsp olive oil and fry the slices on both sides until they are golden brown.
  • Chop the parsley and slice the cherry tomatoes.

Avocado-Beetroot Sauce

  • Mash one avocado, add beetroot powder, salt and pepper. Mix until combined.
  • Optional* Add a tbsp of lemon juce.
  • Serve the soauce together with the Vegan Savory French Toast and decorate it with sliced cherry tomatos and parsley.
