Easy Vegan Dumpling Soup by my grandma’s recipe. This Balkan-style dumpling soup is simple to make and it takes only 30 min. It’s perfect on cold and gloomy days. It’s also a great meal for picky eaters. They won’t be able to resist the soft and fluffy dumplings that melt in every bite.
How to make the most delicious dumplings
I am a big dumpling lover of any kind. Asian style dumplings, Balkan-style dumplings… the more the better. I remember my grandma making these delicious dumplings for me when I was little and I blame her for my dumpling addiction.
Once I went vegan I was missing this dumpling soup and I had to make a vegan version of it. Actually is even more simple to make than the original one with eggs because that dumpling paste has to be frozen to be used.
The key to making these dumplings perfect is adding the water into the dry ingredients slowly until you get the sticky consistency that will form into a ball.
And the second part is forming solid dumplings with a spoon that looks like an almond shape. This is important because otherwise, you will get dumplings that will fall apart.
Easy Vegan Dumpling Soup - Balkan Style

Ingredients
For The Soup
- 2 spring onions
- 1 carrot
- 1/2 red pepper
- 1-2 celery streaps / root
- handfull of broccoli
- 2 bouillon vegetable cubes
- salt & pepper
- 1/2 vegeta optional
- parsley
For The Semolina Dumplings
- 1 cup semolina flour
- 2 tbsp white flour
- 1/2 tsp baking powder
- 2 tbsp olive oil
- 1/2 cup water or more, as needed
- salt & pepper
Instructions
For the Soup
- Cut all the vegetables into tiny pieces. Transfer the vegetables to a pan (except for the broccoli) and fry them for 2-3 min.
- Pour hot water and add all the spices together with the bouillon vegetable cube. Let it cook on medium heat for 20 - 25 min or until the vegetables soften. (while this is cooking prepare the dumpling paste)
- Once the veggies have been cooking for some time add the broccoli and let it cook for 5 more minutes.
For The Semolina Dumplings
- Combine all the dry ingredients together and mix them well. Add the olive oil and as you are stiring the dry ingreadints start adding the water. The mixture shoud be not to watery, but also not too thick. See the video for the exact consistency. Once the mixture is smooth let it sit for 10 min covered with plastic foil. This will help for the gluten to activate.
- With a spoon start scooping the mixture (as shown in the video) and add it to the soup. Let the dumplings cook for 5 min before is done. Finish it by adding parsley. Enjoy!
