4 to 6 slices of bread (1/2 loaf), preferably thick-cut
1 cup chickpea flour
1 cup almond or soy milk (+ 3 tbsp for lighter batter)
1 tbsp olive oil
1/2 tbsp salt
1/2 tbsp pepper
Black salt (kala namak), optional
1 tbsp turmeric
1 tbsp paprika
Handful of cherry tomatoes
Fresh parsley, chopped
1 ripe avocado
1 tbsp beetroot powder
Salt & pepper
Optional: 1 tbsp lemon juice
In a bowl, whisk together the chickpea flour, olive oil, salt, pepper, black salt (if using), turmeric, and paprika.
Slowly add the plant milk and whisk until the batter is smooth and lump-free.
Cut your bread into thick slices and dip each one into the batter, coating all sides.
Heat 2 to 3 tbsp olive oil in a pan over medium heat.
Fry the coated slices for 2 to 3 minutes on each side, or until golden brown and crispy.
Slice the cherry tomatoes and chop the parsley for topping.
Mash the avocado in a small bowl.
Add beetroot powder, salt, and pepper.
Mix until smooth.
Optional: add lemon juice for brightness.
Serve warm with the avocado sauce and top with cherry tomatoes and parsley.
