Ingredients

For the Savory French Toast

  • 4-6 slices of bread (1/2 loaf), preferably thick-cut

  • 1 cup chickpea flour

  • 1 cup almond or soy milk (+ 3 tbsp for lighter batter)

  • 1 tbsp olive oil

  • 1/2 tbsp salt

  • 1/2 tbsp pepper

  • Black salt (kala namak), optional

  • 1 tbsp turmeric

  • 1 tbsp paprika

  • Handful of cherry tomatoes

  • Fresh parsley, chopped

For the Avocado–Beetroot Sauce

 
  • 1 ripe avocado

  • 1 tbsp beetroot powder

  • Salt & pepper

  • Optional: 1 tbsp lemon juice

Instructions

Savory Vegan French Toast

  1. In a bowl, whisk together the chickpea flour, olive oil, salt, pepper, black salt (if using), turmeric, and paprika.

  2. Slowly add the plant milk and whisk until the batter is smooth and lump-free.

  3. Cut your bread into thick slices and dip each one into the batter, coating all sides.

  4. Heat 2–3 tbsp olive oil in a pan over medium heat.

  5. Fry the coated slices for 2–3 minutes on each side, or until golden brown and crispy.

  6. Slice the cherry tomatoes and chop the parsley for topping.

Avocado–Beetroot Sauce

  1. Mash the avocado in a small bowl.

  2. Add beetroot powder, salt, and pepper.

  3. Mix until smooth.

  4. Optional: add lemon juice for brightness.

 

Serve warm with the avocado sauce and top with cherry tomatoes and parsley.
