
1 cup of water or plant milk
1 cup all-purpose flour
2 tbsp neutral oil (plus more for the pan)
1 tsp baking powder
1 tbsp rice syrup (or maple/agave)
Pinch of salt
Optional: 1/2 tsp vanilla; extra liquid to thin as needed.
Whisk liquids: water/plant milk, oil, baking powder, salt, and syrup.
Whisk in flour until smooth (or blend). Rest for 5 to 10 minutes.
Heat a nonstick pan that has a light layer of grease over medium heat.
Add ~¼ cup batter, create a thin swirl, cook for 45 to 90 seconds; flip and cook for another 20 to 30 seconds.
Repeat the process, adding a thin layer of grease to the pan as needed. Fill and serve warm.
