Easy Vegan Crêpes (Eggless & Dairy-Free)

Ingredients

  • 1 cup of water or plant milk

  • 1 cup all-purpose flour

  • 2 tbsp neutral oil (plus more for the pan)

  • 1 tsp baking powder

  • 1 tbsp rice syrup (or maple/agave)

  • Pinch of salt

  • Optional: 1/2 tsp vanilla; extra liquid to thin as needed.

Instructions

  1. Whisk liquids: water/plant milk, oil, baking powder, salt, and syrup.

  2. Whisk in flour until smooth (or blend). Rest for 5–10 minutes.

  3. Heat a nonstick pan that has a light layer of grease over medium heat.

  4. Add ~¼ cup batter, create a thin swirl, cook for 45–90 seconds; flip and cook for another 20–30 seconds.

  5. Repeat the process, adding a thin layer of grease to the pan as needed. Fill and serve warm.

Notes

  • Thinner batter = lacier crêpes. Add liquid 1 tbsp at a time.
  • For gluten-free, try a 1:1 GF all-purpose blend or light buckwheat mix; add 1–2 tbsp of extra liquid if needed.
