Ingredients

Main Ingredients:

  • 200 g pasta (any shape you love)

  • 200 g soy cooking cream (or another vegan cream substitute)

  • 10-15 fresh mushrooms, sliced

  • 100 g smoked tofu, cubed

  • 3-4 garlic cloves, minced

  • Fresh basil, chopped

  • Olive oil

  • Salt & pepper, to taste

Optional Add-Ins:

  • A splash of white wine for depth

  • Nutritional yeast for extra cheesiness

  • A pinch of chili flakes for heat

Instructions

Step 1 — Prep the Aromatics
Wash and slice mushrooms. Cube the smoked tofu. Mince garlic and chop basil.

Step 2 — Cook the Pasta
Boil pasta according to package instructions until al dente. Drain and set aside.

Step 3 — Sauté the Mushrooms & Tofu
Heat olive oil in a pan over medium heat. Add a pinch of pepper.
Stir in garlic, mushrooms, and smoked tofu.
Sauté for 10 minutes, or until mushrooms are golden brown.

Step 4 — Make It Creamy
Pour in soy cooking cream and add salt to taste.
Simmer for 2–3 minutes, letting all the flavors blend into a rich, creamy sauce.

Step 5 — Combine Everything
Add the cooked pasta to the pan. Toss until fully coated in creamy sauce.

Step 6 — Garnish & Serve
Top with freshly chopped basil. Serve warm and enjoy!
